Yeeeeeesssss! Gingerbread men everywhere!!!!!!!!! Loooooots of Gingerbread Men! Last week I created 40 of them in their cookie version  :P So there was an invasion of Gingerbread Men in the house :)

They are everywhere, even at my Lego Xmas decoration!

Making them was a lot of fun, and the day I was decorating them it started snowing! It just made me sooooooooooo happy (you people following me on Facebook or Twitter already now i was really happy), it just felt so much like Xmas. At least some snow, this year I'm leaving in Berlin and it's almost no snow, how sad is that :(

So these little men can also be used as decoration for your Xmas Tree if you poke a hole in their heads right before you bake them (which i didn't because i have no tree and because it just seem so cruel to make them that!). So they have two uses for Xmas: as a treat and as deco! Isn't it great! I will include these little men in the CSC#12 event with the topic: Xmas, hosted by Jiza of the Blog En el Vergel del Edén.

Oh No! They are throwing Snowballs!!

Gingerbread Man Cookies (Vegan. Makes about 40 cookies of the size you see on the pics. Based on the recipe from the book VCIYCJ : Buy it!)

135  gr white flour (or up to 145 gr if you feel the dough needs it)
135 gr Whole Wheat flour (you can use the mix of the two flours or make it with just one of them)
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp clove
1/2 tsp nutmeg
1+ 1/4 tsp ginger (if you like it more gingery you can add up to 1 + 1/2)
80 mlsunflowerseed oil
100 gr brown sugar
50 gr white sugar
4 TBsp agave nectar
55 ml vanilla soy milk

Icing:
125 gr powdered sugar
1 + 1/2 Tbsp vanilla soy milk
Some drops of lemon Juice

Mix the dry ingredients (but the sugar) together. Beat together sugar and oil, adding then the other wet ingredients and mixing. Then add in the dry ingredients mixing until you get a stiff dough. Wrap it in plastic wrap and put in the fridge to chill for at least an hour. Preheat the oven to 175ºC and take the dough out of the fridge rolling it with a rollpin on a nonstick or floured sourface. Cut out the little men with your cookie cutter, and place them on a baking sheet covered by baking paper. Bake for about 7 - 9 minutes. Take out of the oven and let chill for 5 minutes before you transfer then to cool completely. Once they are totally cooled, you can decorate them with the icing you made just mixing the ingredientes (adding more or less milk as you feel it needs it or not, it doesn't have to be too runny!) I divided my icing in two and coloured one red.

I also added some gold vegan edible glitter to make them more Xmas like! Some of them ended up being more glittery than others :) Hope you like them!
