Mini Cupcakes de chocolate y fresa

Hola chicos!
Vuelvo con retraso, lo sé. Sé que prometí esta entrada para este finde pasado, pero no he tenido nada de tiempo estos días! Pero aqui os la traigo, la receta para hornear 24 mini cupcakes de chocolate exactamente, ni uno más ni uno menos! No creeis que los minicupcakes son la cosa pequeña más mona del mundo mundial? Me encantan! El otro día por fin me compre una bandeja para hornear mini cupcakes/muffins! Más feliz yo!

Yes, I know I promised on facebook to post this recipe this weekend, I know i'm late again, but I really had no time during these days to write the post, sorry! So here it is, the recipe to bake exactly 24 mini vegan chocolate cupcakes! :)
Aren't mini cupcakes just like the cutest little thing ever? I love them! I finally got myself a mini cupcake/muffin pan the other day! So great! 



Estos minicupcakes los horneé para llevarlos de miniregalo para la gente con la que ibamos al cine a ver Amanecer parte 1. Qué ganas tenia, Sí, soy una gran fan de Crepúsculo (eso sí prefiero los libros a las pelis, pero aún asi me encantan!)...aunque, bueno, supongo que soy una gran fan de todas estas historias novelas de fantasía para adolescentes. También me encanta Crónicas Vampíricas...ays! que llegue enero ya para qué continúe la temporada!!!!! Bueno, volvamos al tema principal, que me voy pro las ramas, jiji. Pues eso, me lleve estas cupcakes para que las disfrutaramos mientras veíamos la peli en el cine, y a todo les gustaron mucho!! Feliz, feliz, feliz!  :) La pena esque no tengo casi ninguna foto decente de ellas, porque cuando acabé de prepararlas ya era de noche y las que no se comió el catador cuando llegó del curro me las llevé al cine, así que no hay fotos con luz natural............... :(

I took some of these minicupcakes as a little present for the people we were meeting to go to the movies to,  to watch Breaking Dawn part 1. I was so excited, I'm a big Twilight fan (I like the books much better than the movies though)...well, I guess I'm pretty much a big fan of almost all these young adult fantasy stories. I'm really into the Vampire Daries too, I want it to be january already so bad so that the season goes on again!!! ;P Oh well back to the topic, I brought them with me to indulge ourselves while watching the movie, and everyone liked them! I was so happy! :)  Such a pitty I couldn't take any nice picture of them with sunlight. When I was done baking them it was already dark  and then my bf ate quite a few when he came home from work and I took the rest with us to the movies.


Minicupcakes veganas de chocolate con "buttercream" de fresa y vainilla (24 unidades)


Minicupcakes:


120 ml leche de soja (u otra vegetal) de chocolate
1/2 cucharadita de vinagre de manzana
80 gr de azúcar fino

40 ml de aceite de girasol
1/2 cucharadita de esencia de vainilla
1/2 cucharadita esencia de almendra (o de chocolate): opcional
70 gr de harina de repostería
2 cucharadas de cacao
1/4 mas 1/8 cucharadita bicarbonato
1/4 cucharadita de levadura tipo royal
una pizca de sal


Precalentar el horno a 175ºC. Mezclar y dejar reposar la leche vegetal con el vinagre. Mientras mezclar el resto de ingredientes secos, menos el azúcar, y tamizarlos. Añadir el resto de ingredientes líquidos, más el azúcar a la leche y el vinagre, batir. A esta mezcla añadirle la de la harina con el resto de ingredientes tamizados. Mezclamos justo hasta que se incorpore todo bien, no debemos pasarnos batiendo. Repartimos en nuestros papelitos para mini cupcakes que ya tendremso puestos en la bandeja, y los rellenamos con dos cucharatitas de masa. Hornear durante 8 - 10 min, o hasta que un palillo insertado en el centro salga limpio. Dejar enfriar 5 minutos en la bandeja y después dejar enfriar fuera de ella.



Buttercream de fresa y vainilla:

25 gr de manteca de coco atemperada
35 gr de margarina o "mantequilla" vegetal
100 gr de azúcar glas tamizado
2 cucharadas de mermelada de fresa a la vainilla (si no tenemos esta mermelada, utilizar mermelada de fresa normal y añadir media cucharadita de esencia de vainilla)
2-3 cucharaditas de leche de soja de vainilla

Con la batidora mezclamos la manteca y la margarina, hasta que quede homogéneo. Añadir el azúcar glas tamizado, y seguir batiendo durante unos minutos hasta que blanquee. Añadir las dos cucharadas de mermelada y seguir batiendo otro par de minutos. Tras esto ir añadiendo de cucharadita en cucharadita a leche de soja y batiendo, hasta conseguir la consistencia deseada.

 A decorar nuestros minicups!

Vegan Chocolate Minicupcakes with strawberry-vanilla "Buttercream" (makes 24 minicupcakes)Minicupcakes:

120 ml chocolate soja milk (or other plant milk)
1/2 tsp applecider vinager
80 gr caster sugar
40 ml sunflower oil
1/2 tsp vanilla extract
1/2 tsp almond (or chocolate) extract: optional
70 gr flour
2 Tbsp cocoa powder
1/4 plus 1/8 tsp baking soda
1/4 tsp baking powder
pinch of salt

Preheat oven to 175ºC. Whisk together the milk and vinegar and let it curdle. Meanwhile sift and mix together the dry ingredients but the sugar. Add the rest of the wet ingredients and the sugar to the milk and vinegar mixture. Add dry mixture to the wet one and mix, be careful not to ver mix, just until everything is homogenous. Place two teaspoons of your batter into your minicupcake liners already place in your baking pan. Bake for 8 - 10 minutes or until a toothpick inserted on the middle of the minicups comes out clean. Let cool for the first 5 minutes in the pan, and then transfer them out and let them cool completely.


Strawberry-vanilla "Buttercream":
 
25 gr coconut oil/fat or shortening
35 gr vegan margarine/butter
100 gr sifted powdered sugar
2 Tbsp strawberry and vanilla jam (or just regular strawberry jam plus 1/2 tsp of vanilla extract)
2-3 tsp vanilla soy milk

Cream together margarine and coconut fat. Add sifted powdered sugar and beat until it takes a white shade. Then add in the jam and beat for a couple more minutes. After that start adding the milk, tsp per tsp beating in between until the right consistency is achieved.

Now we can decorate our minicupcakes!!


En las fotos no se distingue pero el frosting queda con un color rositas claro muy cuco. Os pongo un par de fotos de las dos únicas supervivientes la mañana siguiente a las que les pude sacar alguna foto con un poco de luz decente.

You can't really tell on the pictures, but the "buttercream" had a cute pale pink colour :) Here you can see a pic with some light of the only two left for the next morning.

Garbanzos con ACELGAS y Quinoa

Sí, ACELGAS, en mayúscula, por fín encontré acelgas por aquí! Tan feliz yo :)  Al día siguiente no pude reprimirme y tenía que hacer unos garbanzos con ellas, tenía tal antojo de hacer potaje de garbanzos con ACELGAS (que por cierto se vio aumentado cuando en La Cocina de Nihacc aparecieron hace nada un par de recetas con acelgas y uno de ellas con garbanzos...me moría de envidia!) y el otro día al hacer la compra, ahí estaban unos manojos de Acelgas, enseguida cogí uno y lo llevé levantando el brazo feliz hacia el catador: "Acelgas, mira, hay acelgas!".... creo que la gente en el súper pensó que estaba loca (menos mal que había poca gente ;P )
I finally found Chard here!!!!!!!! I'm so happy! :) So the next day i just had to cook a chickpeas with chard stew, i have been craving that for so long now (craving that got even worse when I saw a couple of wonderful recipes with Chard posted here: La Cocina de Nihacc). The other day while i was grocery shopping i found chard, i was so happy when i saw it that i grab one bunch and hold it high while i was looking for my boyfriend around saying out loud: "Chard, look, i found Chard!".... i guess people around might have thought i was kind of crazy ;P


Al principió pensé en hacer un simple guiso de garbanzos y acelgas, pero decidí añadir un ingrediente sorpresa para hacer aún más cantidad y que pudieramos congelar para más tiempo. ¿Cual? la quinoa! Así aumentamos las propiedades nutricionales de nuestro potaje :)
At first I though of cooking a really simple chickpea and chard Stew, but then i thought of adding a surprise ingredient that will make more stew and so we could have some left to freeze. It was Quinoa, which makes the stew's nutrinional properties even better :)


Potaje de Garbanzos con Acelgas y Quinoa

500 gr de garbanzos (si son de bote o la mitad más o menos si empezamos con ellos secos y deberemos cocerlos previamente)
100 gr de quinoa
2 patatas grandes
2 zanahorias
1 cebolla de tamaño mediano
1 manojo de acelgas
3 dientes de ajo
2 - 3 cucharaditas de pimentón
2 cucharadas de aceite de oliva virgen extra
sal al gusto
laurel


Yo utilizo garbanzos de bote porque no tengo olla rápida y aqui, no se si será el agua o qué, por mucho tiempo que los deje cociendo no se me ablandan, así que me niego en rotundo. De bote y punto. Así que cocemosnuestro sgarbanzos de bote (o ya cocidos durante un tiempo) y los ponemos en la olla con agua hirviendo y un par de hojas de laurel. Los dejamos cocer mientras preparamos la cebolla, patatas y zanahorias, que limpiaremos, pelaremos y trocearemos. De las acelgas troceamos por un lado las pencas y por otro las hojas. También limpiaremos en un colador la quinoa con agua al chorro. Añadimos todo esto, menos las hojas de la acelga, a la olla, y lo dejamos cocer unos 20 min, o hasta que veamos que está todo ya hecho. Le añadimos la shojas de la acelga y dejamos cocer unos 5 minutos más y retiramos del fuego. Mientras preparamos nuestro sofrito: cortamos los dientes de ajo en láminas y los sofreímos en una sartén con dos cucharadas de aceite de oliva, cuando empiecen a dorarse retiramos la sartén del fuego y dejamos que repose, hasta que dejen de freirse, en ese momento le añadimos las cucharadas de pimentón según nuestro gusto (a mi me encanta!) y volvemos a poner a fuego muy bajo muy poquito tiempo, hasta que veamos que empieza a burbujear un poquito (si quemamos el pimentón nos amargará el guiso, así que ojo). Añadimos este sofrito a la olla que volveremos a poner a fuego medio unos minutos hasta que veamos que el caldo empieza a coger cuerpo. Retiramos y dejamos reposar un poco antes de servir, rectificando de sal (que yo no he puesto durante todo el guiso....).

Chickpea with Chard and Quinoa Stew (makes 4 - 6 servings)

500 gr chickpeas (in a can ones are ok)
100 gr quinoa
2 big potatoes
2 carrots
1 onion
1 chard bulb
3 garlic cloves
2- 3 teaspoons paprika
2 tablespoons extra virgen olive oil
salt to taste
bay leafs

I don't have a pressure cooker here, so i never use dried chickpeas, because, i don't know if it's because of the water or what, it doesn't matter for how long i cook them, they just always turn out still kind of hard. So we added our canned (or already cooked for a while) chickpeas to a pot with enough boiling water and a couple of bay leafs. While they cook for a little while we clean, peal and cut in pieces the onion, potatoes and carrots. Clean the char and cut separatly the stalks and the leaves. Rinse the quinoa qith some water. Add all this to the pot but the chard leaves. Let it cook for 20 minutes or so, then add the leaves and cook for 5 more minutes and take the pot form the heat. Peal and cut your garlic cloves, sauté them with the olive oil, once they start getting a light brown shade take the pan off the heat letting it cool down a little bit until you see the garlic is not being cooked anymore, then add to it the paprika and put back on low heat, until it starts making little bubbles (this happens fast and you have to be careful not to burn the paprika, because if you do it just won't taste good). Add this from the pan to the pot, and put the pot back to medium heat for some minutes, take off the heat , add salt if you like, and let it cool for a little while before serving.

Un cumple del catador muy dulce

Llevo unos días sin parar de comer y horneando mucho! Más bien! ¿Por qué? Porque el jueves fue el cumple del catador y por supuesto tuvo  mi aportación dulce según sus preferencias.
So it's been a few days eating non stop and baking a lot! So much fun! Why? Well, because on thursday was my boyfriend's (a.k.a.  the taster) Birthday and I added my sweet touch based on what he likes :)

Para el día de su cumpleaños pidió cupcakes, tanto para celebrar en casa como para llevar a su trabajo. Y entre ellas no podía faltar un tipo: chocolate y crema de cacahuete (una de sus combinaciones preferidas, el otro tipo de dulce prefe os lo digo más adelante)! Para que no fuera tan monotemático en sabor hice también de otro tipo: Limón y arándanos, ñam!
On his Birthday he requested cupcakes to celebrate at home and also to take to his work. And of course, the one kind that I HAD TO bake was Chocolate and Peanutbuttercream (it's one of his favourite sweets, the other one you'll find out later in this post ;P ). For it not to be that boring just having one kind, I also baked: lemon and blueberry, yummy!


Muchas cupcakes! El pobre catador no pudo ir en bici a trabajar ese día, y de hecho tuve que acompañarle yo al curro para poder transportar todas las cupcakes :)
Lots of Cupcakes! He could not ride his bike to work that day, and, in fact, I had to go with him to help him take all the cupcakes to his work.




El otro dulce cumpleañero era para el sábado, que celebrabamos el cumple con unos amigos en casa....muuucha comida! Fue una tarta de su otro sabor favorito: Tarta de zanahoria con crema de "queso". Más rica que quedó! Aún queda un minitrozo y yo lucho por no comermelo, no paro de repetirme: Patri, es la tarta de tu catador, no es tuya, es suya, de su cumple, no puedes hacerla desaparecer..... Tendré suficiente fuerza de voluntad hoy para conseguirlo, quién sabe...
The other sweet treat was meant for the mini party we would have at home on Saturday with some friends and lots of food :)! The choice for that day was a cake, and what else could it be than his other favorite kind: Carrot Cake with Cream "cheese" frosting. It was so yummy! There's still a little piece of it in the fridge, and I'm trying so hard not to go and eat it, I just keep telling myself: Patri, it's his Bday cake, not yours, you can't eat it......  Would my will power be strong enough? who knows...............

P.D: Esta vez la entrada está también en inglés, tiene su lógica, ya que mucha gente de la que prueba mis dulces no es española, así que es justo que ellos también puedan entender mi blog :P
P.S: So this time I finally wrote the post in english too, which kind of makes sense, since the people eating what I bake don't speak spanish, and I guess it is nicer if they can understand what I write :P
